Summer Reunions are the best. Love getting back in touch with family and old friends. Take it from me, Nothing like a Mexican Night for summer reunions!! They are casual relaxed gatherings that are full of fun! Everyone will love the food and of course the drinks :)
You can go simple, prepare the food, place on a central table and your guests can munch away as they mingle throughout the night. Or you can go all out with a themed party, choosing vibrant colourful linen, topped with themed or colourful flatware. Use cactus, Sombreros, shakers and margarita pitchers as centre pieces. You can even hire mexican performers to play music and dance. This party will be the talk of the town for a long time! Mexican Nights are real good fun!

Makes 2 cups
The traditional way of making Guacamole is done in a mortar and pestle. It is a flavoursome way to make it as when you grind the ingredients together with mortar and pestle you gradually release their aromas making them more pungent. If you do not have one, then you can chop the vegetables very finely, and mash the avocados with a fork separately, then mix them in.
4 ripe Avocados, mashed
3 firm tomatoes, finely chopped
1 medium white onion, finely chopped
1-2 green chilies, finely chopped or bashed into paste
1 large clove garlic, finely minced or bashed into paste
2 tbsp, finely chopped coriander or parsley
Juice of 3 small limes
Salt & Black pepper to taste
1 tsp olive oil
If using Mortar and pestle, bash together garlic, salt, and chili till it forms a paste. Add avocados and mash, mixing with the chili paste.
Transfer all to mixing bowl, mix with the chopped tomatoes, onions, and lime juice. Season and add 1/2 the chopped coriander, mix to incorporate. Transfer to serving bowl, sprinkle olive oil and the remaining half of the chopped coriander. serve cold with tortilla crisps or toasted low-carb tortillas.
Serving Suggestion for variation, you can serve guacamole in the mortar and pestle, or you can reserve the avocado skin and place the guacamole in it.
Fresh Tomato Salsa
Makes 2 cups
It is best to use firm tomatoes that are not very ripe yet, as they lend their tangy flavour. For colour go for a mix of fresh red, yellow and green tomatoes.
Juice of 1 fresh tomato
6 firm fresh tomatoes, finely chopped
1 medium red onion, finely chopped
1 jalapeno chili, finely chopped or
1-2 green chilies, finely chopped (remove seeds for a milder taste)
Juice of 2 small limes
1 tbsp finely chopped corriander
Salt & black pepper to taste
Mix all ingredients together, and place in serving plate. Serve cold with tortilla crisps or toasted low-carb tortillas.
Serving Suggestion for variation, place the tomato salsa in a small ball that fits in a tortilla cup. Place crisps all around the tortilla cup. You can go for different colour crisps.
Nachos are everyone's favourite! You can add Chile to Nachos for a meaty version. This is a vegetarian version for a lighter cocktail night option. You can go for different colour tortilla crisps.
6 cups your preferred Tortilla crisps
1 can black beans, drained and rinsed
1 small red onion, finely chopped
1/4 cup Tomato Salsa (recipe above)
3 tbsp pickles jalapeno slices
1 1/2 cups shredded spicy Colby Jack cheese or Cheddar cheese or a mix of both
3 tbsp fresh corriander, finely chopped
1 cup sour cream
1 ripe avocado, finely mashed
1/2 clove garlic
Juice of 1 lime
1/4 cup tomato Salsa extra
Salt & Black pepper
Preheat oven to 360F. Spread the crisps on oven proof serving dish.
In a small bowl, combine beans, chopped onions and tomato salsa, mix and spoon over the crisps. It is best to alternate layers of crisps and bean topping. top with pickled jalapeno slices. Sprinkle the top with cheese and bake in preheated oven for 10 minutes or till the cheese is melted.
Meanwhile, in a small bowl, combine sour cream and 2 tbsp chopped coriander. Set aside.
For Mashed Avocado Dip: In a separate bowl, mix mashed avocado, minced garlic, finely chopped chili, chopped coriander and lime juice. Set aside.
To serve, you can either top the ready Nachos with the cream mixture and avocado, or place all accompaniments in small bowls next to the nachos. Serve warm.
Spicy Cheese Quesadillas
Along with the cheese, you can also fill these with cooked sliced chicken, chile, bacon, or turkey. Whichever way you go, serve alongside Sour cream, Mashed Avocado dip & Tomato Salsa.
6 Your choice of round whole Tortillas
1 cup Shredded Colby Jack Cheese
1 cup shredded Cheddar cheese
3 tbsp sliced pickled jalapenos
3 tbsp chopped green onions
Preheat oven to 350F.
Mix shredded cheeses together, and sprinkle over 1 half of each tortilla round. top with pickled jalapeno, spring onions, and meats if using. fold tortilla in half, pressing it gently not to break it.
Place a skillet over medium heat and cook quesadillas one at a time on both sides till lightly browned. Place on baking sheet and bake in oven till cheese is totally melted. Cut each quesadilla in half and serve along side salsa, sour cream and avocado dip.

Whether on the pool, in a party, or a sunset fun, Margaritas are great! here is the best Frozen Margarita recipe ever!! 3 fl oz Lemonade
3 fl oz lime-aide
2 fl oz Fresh Orange juice
6 fl oz Tequila
2 fl oz Triple sec
Crushed ice or ice cubes.
Lime or lemon wedges for garnish
Salt shavings, for glass rim
|Margarita on the rocks|
For a non-frozen version, place all in a shaker and shake, pour over ice rocks in salt prepared tall glass.
Using a lemon or lime wedge wet the rim pf margarita glasses, dip in salt shavings and have them ready. pour Margarita in prepared glasses and serve frozen.
