When it comes to Mexican food, there are many preparations that are famous around the whole the world! there is an abundance of choice. Mexican food can be a bit spicy, especially for those who are not used to chilies and spicy food. The best hosts are those who think of everyone, and for that it is best to prepare 2 versions of spicy foods. One spicy as it should be and another milder version for those who do not like spicy. It is this attention to details that sets you apart as a host and ensures all your guests are happy.
I have chosen the most famous Mexican recipes to include in this post, as these are recipes that come in handy for home entertaining any time. Be it an extravagant Mexican Fiesta or just a gathering at home with friends, these are recipes that make entertaining very simple and a lot of fun. Whenever I want to whip up something quick for my girls night, or when my hubby and I decide on a last minute get together, these are the platters I go for. Try them out you will love them.
For the health conscious, you do not have to break your diet for this night. Guacamole and tomato salsa are essentially vegetables. It is like having a salad, just in small bites. Pair that with toasted Low-fat / Low-carb tortillas and you are seriously not harming your diet. Avocados are very healthy and so are tomatoes, which are full of antioxidants. Take it easy on the Margaritas and you are doing well. What can be better?
Makes 2 cups
The traditional way of making Guacamole is done in a mortar and pestle. It is a flavoursome way to make it as when you grind the ingredients together with mortar and pestle you gradually release their aromas making them more pungent. If you do not have one, then you can chop the vegetables very finely, and mash the avocados with a fork separately, then mix them in.
4 ripe Avocados, mashed
3 firm tomatoes, finely chopped
1 medium white onion, finely chopped
1-2 green chilies, finely chopped or bashed into paste
1 large clove garlic, finely minced or bashed into paste
2 tbsp, finely chopped coriander or parsley
Juice of 3 small limes
Salt & Black pepper to taste
1 tsp olive oil
If using Mortar and pestle, bash together garlic, salt, and chili till it forms a paste. Add avocados and mash, mixing with the chili paste.
Transfer all to mixing bowl, mix with the chopped tomatoes, onions, and lime juice. Season and add 1/2 the chopped coriander, mix to incorporate. Transfer to serving bowl, sprinkle olive oil and the remaining half of the chopped coriander. serve cold with tortilla crisps or toasted low-carb tortillas.
Serving Suggestion for variation, you can serve guacamole in the mortar and pestle, or you can reserve the avocado skin and place the guacamole in it.
Fresh Tomato Salsa
Makes 2 cups
It is best to use firm tomatoes that are not very ripe yet, as they lend their tangy flavour. For colour go for a mix of fresh red, yellow and green tomatoes.
Juice of 1 fresh tomato
6 firm fresh tomatoes, finely chopped

1 jalapeno chili, finely chopped or
1-2 green chilies, finely chopped (remove seeds for a milder taste)
Juice of 2 small limes
1 tbsp finely chopped corriander
Salt & black pepper to taste
Mix all ingredients together, and place in serving plate. Serve cold with tortilla crisps or toasted low-carb tortillas.
Serving Suggestion for variation, place the tomato salsa in a small ball that fits in a tortilla cup. Place crisps all around the tortilla cup. You can go for different colour crisps.
Nachos are everyone's favourite! You can add Chile to Nachos for a meaty version. This is a vegetarian version for a lighter cocktail night option. You can go for different colour tortilla crisps.
