Dubai goes fierce-competition for the title 'Dubai's Best Risotto 2015'



Dubai’s top Italian restaurants compete 
for the title: “Dubai’s Best Risotto” in the World Risotto Contest

Today is the final competition for the title “Dubai’s Best Risotto” and it is taking place live at the Speciality Food Festival, where the chefs will compete in front of the watching eyes of a panel of jury and the attending guests who will then taste the risottos and mark the whole process and finished dish to decide the winner of this year’s Competition. 

This 'Dubai's Best Risotto' journey concludes today, but for the chefs it was a road that started in the beginning of 2015, having decided to go for the competition they have been at work honing their skills, creative concepts and preparing to win their restaurants the bragging rights of serving the city's best Risotto. 

The Qualifications:
From the early morning hours, on Sunday 25th October, at the Emirates Academy for Hospitality Management, an assembly of chefs, judges, photographers and organizers were all getting ready for what would be a day full of action. It was the qualification day for the World Risotto Contest, organized by the Italian Cuisine World Summit. 

While the judges sipped on their morning coffee and discussed the criteria of their upcoming verdicts, the chefs were in the kitchen, each on his/her station, unpacking their ingredients starting to make stock, grate cheese, prepare the many steps to what each believes is their best ever risotto. Soon after that, one by one, started plating and passing their finished plates of their “winner” risotto to the judging panel to taste, critique and mark.

Besides the heat known to reside in professional kitchens, the heat of competition was also on high. Each chef of course wants to qualify and so the kitchen was packed with energy, stirring, sautéing, boiling and plating, it looked to the eye like a time lapse of movement that one could not notice the passing of time and is left at awe for these brilliant chefs manifesting their passion and love for what they do and love for their ingredients and pride in what they serve.

The level of talent present in that kitchen was very high, and each one of the chefs served a beautiful, aromatic and flavorful dish. They were all great that the judges declared it was a very close call and it boiled down to details in the end.

“The Italian restaurants in Dubai are definitely heading in the right direction. The quality of Italian cuisine present in the city is very high and the chefs have done a wonderful job especially under such pressure. There’s been a very broad spectrum of flavours in the risotto qualifications today and I am very pleased with the standard.” Said Chef Michael Kitts, Director of the Culinary, Emirates Academy for Hospitality Management.

The four restaurants shorted listed for the final competition are:

  •          Roberto’s: Chef Mohamed Farouk Nasr – “Risotto ai Porcini Freschi”
  •          Segreto: Chef Sampath Wajira – “Carnaroli with foie-gras, hazelnut and truffle honey”
  •          Eataly: Chef Gardini Davide – “Risotto Terra Mia”

Dubai competes again for the title 'Dubai's Best Pasta 2015'



Dubai’s top Italian restaurants compete in Pasta Premiere League 
for the title: “Dubai’s Best Pasta”

Today at the Speciality Food Festival, the finalist pasta chefs who qualified on October 24th are gathering to compete live in the Finals of the Pasta Premiere League. From the Early morning, they will prepare their stations, cook their best Pasta dish for a panel of jury and voting audience hoping to win the title, Dubai's Best Pasta. This will mark the conclusion of a journey they have started at the beginning of 2015, preparing in order to win their restaurants the boasting rights of serving the city's best pasta.

The competition started on Saturday 24th October, where 15 of the top Italian restaurants were competing to qualify for the Final of the Pasta Premiere League. Watch the qualification video on this link. This competition is organized by the Italian Cuisine World Summit as part of the program of its 7th edition taking place in Dubai (27 October - 5 November 2015).

The qualifications took place at the Emirates Academy For Hospitality Management. This was the first round of competition to shortlist the 5 restaurants that will compete in the finals, which will take place on Friday 28th October 2015, at the Speciality Food Festival – World Trade Centre 27-29 October). This competition is definitely another highlight of this year’s Speciality Food Festival, as attending guests will get to watch the finalists compete live for the title, and will also get to taste the pasta. And if that was not enough, then attendees will also get a say in who wins as they will vote for their favourite!


The level of talent present at the Emirate’s Academy kitchen that morning was outstanding, and each one of the chefs served an impressive dish and some even awed the jury. They were all so closely rated that the judges declared it was a very close call and it boiled down to “what was missing rather than what was present”.

“It is easy to impress the judges with adding more things on the plate, more decorations, more ingredients, the use of flowers…etc. But what really matters in the end is the soul of the dish. It is the simplicity of the dish that matters, because Italian Cuisine is a simple cuisine and not built on complexity as is the case with some other cuisines. That is what makes all the difference in the critique and judging criteria.” Said the President of The Jury, Maurizio Pelli who is a an Italian Food Writer and private chef.

The five restaurants shorted listed for the final competition are:
  • Toscana, Chef Sciotti Michele – “Pasta linguine cacao and pepper with Sicilian red prawns and lime”
  • Roberto’s, Chef Sameera Namal – “Spaghetti cacio e pepe (cheese and pepper) revised (carbonara)”
  • L’olivo, Chef Aigerim Aitbayeva – “Mazara’s red prawns, baby calamary spillo, Bronte’s pistachio sauce and borrage”
  • Per Te, Chef Shiyas – “Tagliatelle with pigeon ragout, pinenuts and celery di piccione”
  • Casa Mia, Rozario Clifford – “Linguine ‘risottate’ with seafood

Gelato Chefs Cup at Lafayette Gourmet

The Gelato Chefs Cup is one of the activities organized by the Italian Cuisine World Summit for summit’s 7th edition (2015). This is a competition for Dubai-based chefs and pastry chefs to compete for the title ‘Dubai’s Best Gelato Chef’ using Gianni Gelato’s Machines and ingredients.

The competition will run in two parts: 

The Qualifications, which will take place on October 31st at Gianni Gelato showroom and 

The Final Competition that will take place on November 2nd at Lafayette Gourmet (Galeries Lafayette, Dubai Mall) where the chefs will compete live for the title. 

The Final competition at Lafayette Gourmet is open to public. Not only will those who attend get a chance to taste the gelato creation, but they will also participate in the judging and the choosing of the winner as they will vote for their favourite gelato. The chefs will also be judged by a panel of Michelin chefs, master chefs, internationally renowned gelato experts who will be assessing the competitors’ creativity, presentation and the texture and flavor of their creations.

• Italian Master Chef Mario Caramella 


• Chef Russell Impiazzi, Culinary Director Lafayette Gourmet

The ‘Gelato Chefs Cup’ winner will receive the Winner Certificate, and will win a 3-day trip to Italy as well as a course in the gelato school (Gelateneo Ice Team 1927).

#ICWS15 - Italian Michelin Gourmet Golfing Day!

As part of the planned activities of the 7th edition of the Italian Cuisine World Summit, is the Italian Summit Golfing Day, which will take place at the Address Montgomerie Golf Club on November 3rd, 2015, at 12:30 pm.

For the first time ever in Dubai, the privileged players will receive refreshments at the holes of the five Italian Gourmet Stations that will be offering both: tidbits prepared by four Italian Michelin-starred chefs and some superb Italian wines. Italy's Best teams up with Dubai's Best Chefs to give you "The UnitedNations by Italian Cuisine"

Perhaps the most exciting event in this year's Italian Cuisine World Summit, is the November 1st event! Because for the first time ever over 170 chefs team up and gather in one venue to cook up a storm and serve Dubai the most delectable menu that anyone can ever savour! This event is the Italian Cuisine World Summit's tribute to Dubai as the "World Food Capital". Master Classes By Italian Michelin Chefs at SCAFA - Designed for Media & Communications Professionals

As you may already know the 7th Edition of the Italian Cuisine World Summit (#ICWS15) is just around the corner, kicking off on October 27th and running through to November 5th, Dubai is right now in full prep mode. This time of year is such activity packed one especially for foodies as events are everywhere. But for most food lovers and food connoisseurs, the Italian Cuisine World Summit is a unique opportunity to sample another class of food and dining experiences that most of us travel to specific destinations to experience. Having over 25 of the top tier Italian Michelin Chefs come to Dubai again to take over the city's best loved Italian restaurants offering their Michelin menus (which they cook themselves) for Dubai's foodies to savour at the comfort of their own city is truly a unique opportunity. And if that is not enough, then offering Dubai food lovers a chance to rub shoulders with their Michelin Stars, get to know them a little bit closer, sit in sessions with them to pick their brains, learn straight from them,  watch them at work: cooking and demonstrating then sample their foods as they chat with them... I know I need not say more, because for the passionate foodie, the aspiring chefs and even the journalists looking for unique and motivational stories these experts are the role models and their stories are truly inspiring.

 The summit as ever had organised many events and activities all around Dubai. There are over 30 very unique and exquisite activities taking place under the umbrella of ICWS15 in just 10 days! So as you can tell, you will have to know what, when, where and make your bookings early in order not to miss out.

Short Description - This is a series of Masterclasses designed specifically for Media and Communications Professionals to enhance the quality of their communications and information where the Italian Cuisine is concerned. 
Participants are free to take 1 class or go for the full course See the schedule below).

Why go for it? - A lot of misinformation circulates around these days and media professionals perform and do better when they are properly informed. While these classes are about Italian cuisine, however the approach and tools acquired apply across the board. These classes are conducted to explore authenticity of Italian cuisine, innovation without losing the authenticity, modernisation while staying true to authentic cuisine, traditional versus modern recipes, developing concepts and recipe development…etc. And who better to explore this, instructing the participants than the most passionate chefs about Italian Cuisine? The Michelin Chefs of Italy! 

How does it work? - Each session will be held by a different Michelin Chef, in a small cozy set up, each chef will discuss these topics with the moderator and the participants are welcomed (in fact encouraged) to get involved in the discussion, raise questions, ask for best practices…etc. The idea is an open discussion and dialogue, learning from those who successfully made it in the industry. The chef will also demonstrate some of his/her foods throughout and the participants will get a taster of the demonstrated foods. 

We did not forget Social Media - Every session will also tap into communications and modern communication channels and trends, social media communications, the importance of food photography and styling to marketing and brand awareness, as well as developing updated marketing strategies. 

Full meal also included - After the morning Session and before the afternoon session participants can enjoy a lunch at SCAFE, the Cafe at SCAFA (price included in the ticket)!

#FotoDubai15 was our best workshop so far!

#FotoDubai15 Hands-on Practice


Despite working on a few great events each year, the food styling & photography workshop that my friend (German Food Photographer) Meeta K Wolff and I hold here in Dubai remains one of my favourites. I love creativity, creative projects and creative people and this event is always loaded with all these. Photography, despite being a whole science, it is also a whole lot of art. Each person has a different eye, their unique style and perspective. Each one has a story to tell and it is always such pleasure to read people's stories through the frames they create and this workshop allows everyone involved to enrich and be enriched by the whole experience of interaction and sharing. Not only is this limited to ourselves and participants but it also extends to our sponsors. SCAFA students for instance had been keen on participating for the second year now and for whom we dedicate a separate day altogether bespoke to their unique requirement as upcoming chefs and industry professionals. When the air is charged with such creative energy, you cannot begin to imagine the drive you feel the connection you share with those around you and that is exactly how I feel each year and why this workshop remains one of my favourite creative events.

Despite being a short 2 days workshop, the two days are packed with activities, theory sessions, hands-on practice and assignments. The two days are intensive, however, the participants enjoy them and learn so much, they always emerge on the other side saying they cannot believe in two days their skill as well as their creativity had improved so much. You see, while this workshop is definitely a specialised food styling and photography course, but it also includes sections that deal utterly with what I like to refer to as "creation". From concept creation, to story lines and identifying niches and market needs to even approaching the food with a fresh perspective (what I refer to as "creative narrative/content"), this is where I come in and explore with participants how to unleash their creative energy and how to free their thoughts and find their individual space within the over-loaded sphere of contents. The resulting discussions and seeing how each individual takes these instructions and runs with it is the most exhilarating experience. I find tremendous inspiration myself throughout the whole process.

#FotoDubai15 was a great workshop, from our partners and sponsors, to participants and even activities everything fell into place beautifully. I love how every year the creativity rubs on everyone involved and our sponsors get creative and help us further enrich the whole experience.

This year our permanent partner and sponsor Chef Russell Impiazzi, the culinary director of Lafayette Gourmet, had gone above and beyond with his 'wild foods' themed finale dinner. He turned a whole table into a beautiful garden of wild foods including the morning or evening mist (as you can see in the video above)! The food was gorgeous as you can see, and it was absolutely decadent. I especially loved the rabbit and the oxtail ones they were to die for! I can taste them as I type this! (Lafayette Gourmet do fantastic catering of private parties make sure to order these two options, they really are succulent!) And chef Russell did not stop there, he even created another landscape of what I saw as the "after-party scene" of a selection of desserts that were so mouthwatering and fantastic! He really did help us throw a memorable dinner to celebrate the end of the workshop ending the two days on such a high note and with a dinner that became the talk of the whole town!

Also this year, Riath Hamed, the owner of Balqees Honey provided a huge selection of their honeys for us to use for the "best product shot" competition among our participants. Each one of the participants - as you saw in the video above - styled and shot a product shot featuring Balqees raw honey, and during the finale dinner Riath viewed the pictures and chose the two best shots and awarded the photographers a Balqees honey prize! All participants went home with a container of Balqees Honey.



Yael Mejia, the brand consultant to Baker & Spice Dubai, besides being a very good and hugely supportive friend of mine, had as you can see in the video catered a full brunch on the first day of the workshop that happily fed all of us with organic, wholesome, absolutely amazing selection of food (home-made labneh, yogurt and granola, fruit salads, jams, mutabal, Shakshooka selection and a to die for selection of breads, including my favourite Kaek Bisimsem, croissants and danish...) This brunch and the food provided by Baker and Spice was amazing to use in the shots and for participants practice. You know we don't waste food during the workshop, we practice on the food we eat and as such the Baker and spice food were absolutely gorgeous to shoot and such pleasure to eat! All participants went home with a Baker & Spice goodie bag containing some of their fantastic snacks to munch on as they practice their new skills.
( I also placed my DS Organic Mooneh Essentials: olive oil, zaatar sampler, spice mix, and 3 different jars of pickles for them to take home as my jars fit best at the Baker & Spice bags next to like-hearted foods!) Speaking of snacking, throughout the workshop the participants were munching on the fruit platters so generously provided by our amazing friend, Tony Colley, GM Lootah Premium Foods. You know when your mind is racing you feel hungry and you need to munch and what better option is there than munching on superior quality fruits! And when the day was over and we were so tired and hungry, Retro Feasts Dubai were gems! They fully booked their restaurant at The Beach solely for us to feast on their fantastic food and to use as a photography studio! Who does that? Trust me not many, and while most don't care for the community of foodies around them, the amazing people at Retro Feasts are supporters of creativity and the Foodie community, so much that they did all this for us and allowed us to carry out our restaurant assignment so gorgeously. Their restaurant is so visually interesting it really made all the difference. I had shot a video with Polly there and will share it as soon as I get a minute, and you will then see how great that place is. In the meantime, do drop by their waterfront restaurant in JBR. Such amazing view of the open sea, perfect for sunset and lunch when at the beach ;)

As you can also see in the video, without the gorgeous props provided by Ronai LLC, who really gave us so many to work with, making the options unlimited for participants and allowing them to experiment with different sets and moods, we hugely appreciate their support and are very happy they have joined our workshop's small community of partners and sponsors. So are we about the very nice gesture from ELEKTA Gulf who allowed us to add an element of surprise to our finale dinner, where we got to raffle 3 professional windows tablets that 3 lucky winners took home that night! How cool are they?

And of course, all this would not have been possible had we not been so generously hosted at SCAFA School of Culinary And Finishing Arts, who have for the second year now opened their doors for us and granted us access to all their facilities, state of the art equipment and amazing kitchens. Honestly there is no place like SCAFA for hosting such an activity-packed workshop where photographers, chefs, instructors, students and staff will all be running around all day long, each doing their thing!
