What exactly is “Mooneh”? And what is “Mooneh by Dima Sharif”?

Mooneh is the Arabic word for pantry and pantry stock. It is also in reference to the act of preparing produce for long preservation either by jamming, pickling, saucing, dehydrating, juicing…etc. Mooneh preparation is a huge part and section of Arab cuisine and is traditionally carried out at home.

Being concerned about her and her family’s health, as well as herself advocating for and living the lifestyle of “make your own” whenever possible, “cook from scratch” all that you can and “be organic” always and “stir clear from chemicals, preservatives, hormones and synthetic foods”…. Dima decided to offer a line of products that tackles these issues and provides households with these products, ingredients and food stuff that are all natural, organic, small batch non-mass-produced, delicious and all round good for you. Whether they are used in the making of your foods as an ingredient, or are a meal on their own, the Mooneh products are designed to take the stress out of the laborious preparations, offering you a trusted ingredient/product that will help you make and serve good, healthy food anytime.

Mooneh by Dima Sharif is still a new line, in its early stage, but surely growing and expanding, adding new products and items all the time.

Why do the prices vary from time to time?

We buy real products from farmers and small artisanal producers. We make our products using these ingredients which are subject to seasonality, availability and supplier price fluctuations. As such our prices too fluctuate accordingly. When using real food and real ingredients, there is no guarantee it will always be the same cost therefore price.

How long do the Mooneh products last?

You will find the expiry date at the back of each jar. Generally speaking we do not have short shelf life products as our Mooneh is all about preservation for longer shelf life following old school methods. Our products last from 1-2 years (depending the exact product). Once opened, the products are subject to the element and therefore there is no guarantee.

  • If you keep the ones preserved in brine in the fridge once opened, they will last up to the expiry date on the back of the jar (usually 1 year)
  • If you keep the ones preserved in olive oil all covered with the olive oil and not exposed then they will last up to 1 year.
  • If you keep the spices/herbs/dry mixes in their airtight container and stored in a cool dark and dry place, they last for 2 years (fresh and pungent)

Can I store my Pickled Zaatar/Shatta in the fridge?

Yes you can, make sure it is always topped up with olive oil and nothing is exposed. We do not use any preservatives and the food is alive, as such if it is exposed it will spoil. Olive oil is the preservative here. Make sure to take it out of the fridge a few minutes before serving for the oil to soften back to liquid.

When I opened my jar it bubbled and spilt over some oil! Should I throw it?

Absolutely not! Our products are organic products that are fermented and preserved raw. That means that we preserve through ancient and natural methods without the use of any chemicals or preservatives or heat subjugation. As such the fermentation process varies from one product to another mostly dependent on the natural sugars present in the produce itself.

Once jarred and sealed the products start fermenting in the jar (they remain alive so long as they are fermenting), once opened they start pickling. This is the reason why our products taste so good and fresh and you can actually taste the individual ingredients. This is also why these products are super healthy as you are eating food that is alive rather than dead food. This is also why our products just keep improving with time, instead of spoiling. However, this is also the reason why once opened the gasses produced by fermentation bubble and spill over. It is no issue at all. Just let it sit for 2 minutes opened, then consume. Top up again with oil and refrigerate.

Do you supply bulk purchases?

Absolutely. Our main business is B2B, we supply many hotels and restaurants and continue to grow in that sense. Our clients understand that we are not a mass production plant, nor are we a factory of any sort. We are artisanal and work in “to order” “small batches”. All our products are natural and are thus dependent on seasonality and therefore availability. With that said, our clients and partners understand the superior and outstanding quality of our artisanal products and so they choose us. You will have to make sure to place the bulk order well in advance, and you will have to take seasonality into consideration.

We do produce and supply a whole year’s worth of a product during season for a variety of customers. Get in touch through mooneh@dimasharif.com to know more.
