Ingredients, then ingredients and also ingredients are the make or break of good food!

When you are using premium ingredients there is no way that whatever you mix won’t turn out amazing! I always love lentils and love making them all the time, whether as a pilaf, soup or in salads, lentils are delicious and absolutely satisfying! These Beluga lentils taste so earthy and pack so much lentil flavour that all of you lentil lovers out there will be using them all the time.

 

But really the star here is these divine cherry tomatoes that I buy from Rashed Al Kitbi’s organic farm in Al Ain. He truly grows the country’s best cherry tomatoes. And I have made this salad to celebrate all the ingredients that I love. A simple, fast, and fuss free salad that you will enjoy anytime. It will leave you fully satisfied without feeling overly full or bothered. Light, fresh, satisfying and absolutely delicious, the type of food I love to eat. So make it and enjoy x

Ingredients

1 cup cooked Beluga Lentils

1 cup toasted pine nuts

1 green chili finely chopped

1/4 cup finely chopped coriander

2 cups cherry tomatoes, halves or quartered

1/2 cup spring onions sliced

For The Spicy Citrus Salad Dressing

Juice & Peel of 1 Lemon

Juice & Peel of 1 Orange

2 tbsp Organic Raw Yemeni Sider Honey

2 tbsp White Balsamic Vinegar

1-2 tsp DS Tunisian Harissa

2 tbsp DS Pickled Zaatar

DS Premium Organic Extra Virgin Olive Oil

DS Himalayan Pink Salt

Freshly cracked black pepper

 

Cook the Beluga lentils, by sautéing some chopped onions and crushed garlic in olive oil with salt and black pepper. Add the lentils and stir to coat, then add the liquid, cover and adjust heat. Cook the lentils until cooked through.

 

In the meantime, prepare the vegetables and make the salad dressing.

Mix all the dressing ingredients well together.

Once the lentils are done cooking, and cooled. Mix all together and serve cold.
