How to win hearts and showers of compliments?

Make Buttermilk Pancakes for the ones you love!

Pancakes are great, and they are all time winners with most people. You are guaranteed to win some hearts and heavy clouds of compliments when serving pancakes. The two secrets to super gorge pancakes are buttermilk and dry frying in a cast iron skillet or griddle. They will rise and will look awesome with a uniform golden brown look on both sides. There is nothing worse, in my opinion, than greasy pancakes! Dry fried pancakes are so delicious, I can munch on them plain all day!

These pancakes are gorgeous and so delicious, you will literally be popping them! They are a perfect base for many applications too. So don’t get boring with the same presentation, change around and have fun, keep your pancakes interesting. Here are some suggestions:

  • Banoffee Pancakes: whipped cream, bananas and caramel sauce (recipe on this link)
  • Banana and walnuts with 100% pure maple syrup (no high fructose maple flavoured corn syrups!)
  • Baked/flambeed apples with cinnamon, vanilla and walnuts
  • Pumpkin pie spice pancakes (just add pumpkin pie spices to the batter) serve with honey.
  • Aged Balsamic & strawberries.

Ingredients

  • 1 cup flour
  • 2 tsp baking powder
  • a pinch of salt
  • 1 tbsp sugar
  • 1 egg, beaten
  • 1 tsp vanilla extract (recipe on this link)
  • 1 cup buttermilk (or see video below for substitutes)
  • 2 tbsp flavourless vegetable oil

In a large bowl, mix together the flour, baking powder, salt & sugar. Make a well in the centre of the flour mixture and set aside.

In a small bowl, combine the oil, beaten egg, vanilla and buttermilk and mix well. Add the buttermilk mixture to the well you have created in the centre of the flour mixture then stir to combine. Stir just until combined, the mixture should be relatively lumpy.

 

Heat a cast iron skillet or griddle, when hot, add 1 ladle or 1 tbsp (for mini) of the batter and shape into a full circle. When the batter bubbles on top and is browned on the bottom, turn and cook on the other side till golden brown.

Once a pancake is cooked, brush lightly with softened butter, or add a small knob of butter between the layers.

Serve with fresh fruits and honey/100% pure maple syrup.
