Cake & Cupcake Decorating Basics

One of the most delicious chocolate cake frostings out there.

Whether you are a decorator or simply a baking lover, you will want to hold on to this recipe, because it just transforms any ordinary old cake/cupcake into a delicious chocolatey dream! If you are learning cake decorating, then you will have ample use for this frosting. From crumb coatings, to whole cake frosting, piping shapes, roses, and even binding decoration… there is no limit to its use.

Just because it is a chocolate frosting, does not mean it can only top a chocolate base, it can go with vanilla, strawberry, blueberry…etc any flavour that you think pairs well with chocolate (as if there is anything that does not!).

Ingredients

Makes 4 cups

1½ cups butter, softened

1 cup unsweetened 100% cocoa powder, sifted

5 cups icing sugar

½ cup milk

1 teaspoon vanilla extract or seeds of 1 vanilla bean

½ teaspoon espresso powder (optional)

In a large bowl, cream together the sifted cocoa powder and butter until well-combined.

Add the sugar and milk, alternating, to the cocoa mixture. After each addition, turn mixer to high speed for about a minute. Repeat until all the sugar and milk have been added.

Add the vanilla extract and espresso powder 9if using) mix well to combine.

 

Tip – If the frosting is too dry, add more milk, a tablespoon at a time until it reaches the right consistency. If it is too wet and doesn’t hold its form, add more icing sugar, a tablespoon at a time until it reaches the right consistency.
