Raising Diabetes Awareness in the UAE

This recipe is part of the trio of recipes provided by Dr Wafa Helmi for World Diabetes Day.

These recipes were developed by her to suit diabetic patients’ dietary requirements and are published here with her permission.

Ingredients

  • 1 cup lettuce, torn into pieces
  • 1/2 cup cherry tomatoes, halved
  • 1/2 cup cucumber, cubed
  • 5 DS Organic Green Olives In Brine, seeded and sliced
  • 5 DS Black Olives, seeded and sliced
  • 1/2 cup mint leaves, chopped

For The Spiced Dressing

  • 1/4 cup pomegranate seeds for dressing
  • Juice of 2 Lemons
  • 1 tbsp DS Premium Organic Extra Virgin Olive Oil
  • 1/4 cup paprika
  • 1 tbsp coriander seeds
  • 1 tbsp ground cinnamon
  • 1 tbsp cumin seeds
  • 1 tbsp ground cloves
  • 1 tbsp ground nutmeg
  • 1 tbsp ginger powder
  • 1 tbsp ground cardamom
  • Salt & black pepper to taste

Make the Dressing

Combine all the dressing ingredients in a jar. Cover the jar and and shake vigorously to blend.

In a large bowl mix all the vegetables and lettuce together. Dress lightly with the dressing and serve chilled.
