Missing out on the golden kiwis!

Not so long ago,

I had never yet tried golden kiwis! Can you believe that? Well that’s the past as the minute I tried these golden, creamy and luscious kiwis there was no turning back on them! Boy, do they pack some sugar and take the craving out of the day when sugar is on your mind! They are sweet with a touch of honeysuckle to them. They even have hints of lemon and Mango! There is no other way I can describe them.

I had also come to know that these amazing fruits are super good for you, they have antioxidants, anti-ageing, anti cancerous properties among the many vitamins and nutrients!

There are of course many ways you can use golden kiwis. Apart from as is, and in fruit salads, you can always make sweet/savoury kiwi salsa which you can serve as a relish to cakes or (the savoury one) with think seared tuna for instance or a even a steak! Here, I have gone with a sweet kiwi salsa and a whipped, sweetened cream cheese, where I also folded in some kiwis in the whipped cream cheese. I had served them with buttermilk pancakes (recipe on this link) and on another occasion with vanilla crepes (recipe on this link). They turned out delicious. I even filled hollowed out kiwi skins with the folded kiwi in whipped cream cheese, garnished with strawberry wafers and mint and served it as a light dessert, which everybody loved!

Finally, this whipped cream cheese, also makes a perfect filling for cheesecake or fruit tarts! So instead of the classic cream filling, you can use this one instead and infuse any flavours in the same way as I have done with the Kiwis.

Here is how I made the kiwi salsa and the whipped sweetened cream cheese…

Ingredients

Golden Kiwi Whipped Cream cheese

  • 250g Mascarpone cheese, softened
  • 1/2 cup icing sugar, sifted
  • 1 Golden Kiwi, finely chopped
  • 3 tbsp finely grated white chocolate

Duo of Kiwi Salsa

  • 3 of each Golden and Green Kiwis, finely chopped
  • Juice of 2 Green Kiwis and 1 Golden Kiwi, passed through a sieve to get rid of the pulp.
  • 6 mint Leaves, Chiffonade

Place the cream cheese and icing sugar in the bowl of the stand mixer, and mix on low until combined. Raise the speed to high and whip for 1 minute.

Fold in the chopped Kiwi and grated white chocolate, then pour the mixture into the Kiwi skin, top with chopped kiwi pieces, white chocolate shavings, mint chiffonade, a strawberry wafer and cookie wafer as in picture.

Place these kiwi cups standing on a plate or egg cup for your guests to pick.

For the Kiwi Salsa

Place all in a large bowl, and mix to combine. Transfer portions into mini shots or dessert cups and place them on a tray for your guests to pick.

To make kiwi bonbons,

scoop out the kiwis using a melon baller, and brush them with maple syrup. Place these next to the pancakes or crepes along with the whipped cream cheese.
