Who will say no to BBQ chicken?

You just have to have chicken on the menu. It is especially popular with kids, most the ladies and the weight watchers. It does not have to be only Shish Tawook though, it can be a variety of flavours. There really is nothing that does not pair well with chicken. This is an easy recipe that will please everyone. You can turn the heat up a bit with my beautiful Green Shatta (green chili sauce), or you can go without for non-spicy…  You can play around with the herbs going with rosemary, thyme, zaatar if you like, or stay true to coriander and garlic, a match made in aroma heaven! Add cherry tomatoes, don’t add them, add vegetables between the chickens, keep them separate… go fo whole fillets, cube them or even go with full drumsticks… really you know what to do.

BTW, This recipe works exceptionally well with Lemongrass skewers. Why not, play around with this and have fun. Speaking of which, have also included for you a classic Mojito video, in case you don’t already know!

 

Ingredients

  • 1/3 cup peanut oil
  • 1 tbsp grated lime rind
  • 1/4 cup lime juice
  • 6 chicken breast fillets
  • 1 tbsp raw honey
  • 1 clove garlic, finely minced
  • 1 tbsp DS Green Shatta (green chili sauce, optional for spicy)
  • 1 bunch coriander, finely chopped
  • Onion & Green Capsicum, roughly chopped

Rinse your chicken fillets, rub with lime wedges and cut each fillet into 4 strips crosswise, or cube them, otherwise, keep them whole.

In a large bowl, combine all the rest of the ingredients well, then add the chicken, and rub to coat.

Best to marinate this overnight, however if not, then 4 hours at least.

Once ready to BBQ, either skewer, or if using full fillets, then place straight on the grill/BBQ. Cook until the chicken is browned all over, tender and completely cooked through.

This step is optional but highly recommended:

In a small jar, place the 1/2 clove minced garlic, 1 lime juice, 1 tsp shatta (if using), 1/3 cup peanut oil or mixed nut oil, and 1 tbsp raw honey.

Shake well and serve alongside the chicken skewers.
