Fried Rice - an Asian Specialty

Every Asian country has its version of fried rice and Indonesia too has it’s widely popular Nasi Goreng (fried rice). Perhaps the most popular dish amongst all tourists who visit Bali/Indonesia, and definitely most widely eaten dish in the whole of Indonesia. Unlike most Asian fried rice versions, the Indonesian Nasi Goreng is more deeply flavored, being salty sweet rather than bland. It is considered a full meal on its own. Can also be combines with any of your favorite meats/seafoods. It can even be served with satay skewers. Definitely always served with sambal (pick your favorite from the sambal recipe links at the end of this post)

 

Indonesia is known for its beautiful rice terraces. Even between homes, rice grows everywhere. When in Bali, make sure to visit the rice terraces of Ubud, and while there make sure to checkout the crafts market, so many nice items/gifts to choose from.

Ingredients

Serves: 4

2 tbsp vegetable oil

8 cloves garlic, crushed

1 large onion, finely chopped

2 large eggs

700g cooked Asian rice

2 spring onions, roughly sliced

3 tbsp soy sauce

2 tbsp sweet soy sauce

1/2 tsp salt

1/4 tsp ground turmeric

1/2 tsp ground coriander

Heat the oil in a large wok and saute the garlic and onions until golden. Quickly scramble the eggs, lower the heat and add the cooked rice, spring onions, dry spices, sweet soy sauce and regular soy sauce. Stir fry all until thoroughly mixed, making sure to scrape the bottoms.
