The Pico de Gallo!

Whether as a side to your taco, a dip for your tortilla crisps or even as part of a quinoa and vegetables salad… perhaps you would like to serve it next to your grilled salmon, or to uplift a regular chicken roast, or even mixed with your oven-baked potato wedges… whatever you do, this is a refreshing and delicious salsa that you will love and will be making loads of.

Ingredients

  • 1 large yellow tomato, deseeded and finely chopped
  • 1 large red tomato, deseeded and finely chopped
  • 1 large green tomato, deseeded and finely chopped
  • 1 medium onion, finely chopped
  • 1 small bunch coriander, finely chopped
  • 1 green chili, finely chopped
  • 1/4 cup lime juice
  • salt & black pepper to taste

 

Simply mix all the ingredients together.

 

Serve this salsa next to grilled Salmon or fish, Grilled Chicken, in Beef sandwiches or pulled meat sandwiches.

This salsa is also great served with tortilla crisps for a quick snack.
