Serves: 4
  • 12 Leeks
  • 4 large potatoes
  • 2 tbsp butter
  • 1.5 ltr boiling chicken broth
  • Parsley or Rosemary to garnish

Cut the green bit of the leeks and remove withered leaves. Peel and quarter the potatoes and set aside. Thinly Slice the rinsed leeks. fry them in the butter in a big pot. Add the boiling broth to the leeks and stir bring back to boiling, then add potatoes. Leave to cook gently with the lid on for about an hour. put through a blender.

Serve hot.
