you can also fill these with cooked sliced chicken, chile, bacon, or turkey. Whichever way you go, serve alongside Sour cream, guacamole & tomato Salsa. Quesadillas are a fantastic way to use any leftover meats.


Serves: 6
  • 6 tortillas (your choice of tortilla)
  • 1 cup shredded Colby Jack cheese
  • 1 cup shredded cheddar cheese
  • 1-2 tbsp DS Smoked Shatta or 3 tbsp sliced pickled jalapenos
  • 3 tbsp chopped green onions

Preheat oven to 350F-180C.

Mix shredded cheeses together, and sprinkle over 1 half of each tortilla round. Top with pickled jalapeno or DS Smoked Shatta, spring onions, and meats if using.

Fold the tortilla in half, pressing it gently not to break it.

Place a skillet over medium heat and cook quesadillas one at a time on both sides until lightly browned. Otherwise, press on a sandwich press.

Cut each quesadilla in half and serve along side salsa, sour cream and avocado dip.
