It is best to use firm tomatoes that are not very ripe yet, as they lend their tangy flavour. Better yet o use a mixture of red, yellow and green tomatoes for making this salsa fresca.
Colourful, sweet and sour
Ingredients
Serves: 2- Juice of 1 fresh tomato
- 6 firm fresh tomatoes, finely chopped
- 1 medium red onion, finely chopped
- 1 jalapeno chili, finely chopped or 1-2 green chilies, finely chopped (remove seeds for a milder taste)
- Juice of 2 small limes
- 1 tbsp finely chopped coriander
- Salt & black pepper to taste
Mix all ingredients together, and place in a serving bowl.
Serve cold with tortilla crisps or roasted potatoes.
