Colourful, sweet and sour

It is best to use firm tomatoes that are not very ripe yet, as they lend their tangy flavour. Better yet o use a mixture of red, yellow and green tomatoes for making this salsa fresca.


Serves: 2
  • Juice of 1 fresh tomato
  • 6 firm fresh tomatoes, finely chopped
  • 1 medium red onion, finely chopped
  • 1¬†jalapeno chili, finely chopped or 1-2 green chilies, finely chopped (remove seeds for a milder taste)
  • Juice of 2 small limes
  • 1 tbsp finely chopped coriander
  • Salt & black pepper to taste

Mix all ingredients together, and place in a serving bowl.

Serve cold with tortilla crisps or roasted potatoes.
