Cater for everyone, including the vegans!

There is nothing more elegant than a host who caters for all.

Just because you or your guests are vegetarian, that doesn’t mean anyone must miss on a proper BBQ! And let’s be honest here, nobody likes to go to a BBQ to be served the side dishes only. Yes of course there are varieties of vegetarian options on the menu, but wouldn’t you like to feel part of the main event? Like you have been thought of, and cared for enough to be considered beyond “will manage with what’s available”. Well that can be communicated by simply creating vegetarian skewers. Yes as the meat eaters will get their kebabs, and skewers, so will the vegans.

This here is not limited to vegans, everyone will love munching on these. So make loads as they will disappear in no time. They are tasty, herby, earthy, and absolutely Divine. They are in fact so good, that they will work in salads, sandwiches, side dishes and even to turn into a smoked vegetable soup! That’s of course provided you will have anything left!

Use your favourite vegetables, and include as many as you like. Follow the same method for roasting/grilling vegetables at home as a side dish anytime you serve grilled meats.

Ingredients

  • Zucchini, roughly chopped (chunky)
  • eggplants, roughly chopped (chunky)
  • Cauliflower, cut into medium florets
  • Button mushrooms, whole
  • Small radishes, halved
  • yellow capsicum, roughly chopped
  • red capsicum, roughly chopped
  • Pearl red onions, peeled
  • Cherry tomatoes, kep whole

For Marinade/dressing

  • 3 tbsp DS Pickled Zaatar
  • 2 tbsp DS Green Shatta (green chili sauce, optional for spicy)
  • 1/2 cup tbsp DS Premium Organic Extra Virgin Olive Oil
  • 1 tbsp DS Fish & Seafood Spice Mix
  • 1 clove of garlic, crushed

In a jar, place all the marinade/dressing ingredients and shake well to mix. Transfer to a jug and drizzle on top of the prepared vegetables, enough to coat them.

Skewer the vegetables and BBQ until done. Make sure that you do not overcook the vegetables, you still want to have a bite as you eat.

Once done, drizzle with the remaining dressing and serve.

Another way to serve them is to un-skewer them into a large bowl, then drizzle with remaining dressing, toss to coat and serve as a salad.
