A family favorite and an entertaining winner recipe..

Whether you are choosing a recipe to cook for your family dinner or entertaining guests, this is the recipe to go for. This is such a crowd pleaser everyone will love you for it. The inclusion of the spicy tomato salsa is how I love to serve this classic Palestinian cuisine dish, because the tomato salsa just opens up all the flavours marrying everything well together and adding a hook in that kick! you will really not want the experience to stop!

 

I have cooked this recipe using Al Rawdah Chicken in the video below and everyone just loved it. The guests and the crew all ate and loved this Freekeh loved chicken. And the two guests were very happy to learn how to make it. This here is the recipe and the video shows you exactly how I made it.

Ingredients

For the chicken

  • 2 cups DS Freekeh, washed and drained
  • 2 tbsp olive oil
  • 1 onion, finely chopped
  • 4 garlic cloves, crushed
  • 1-liter chicken broth
  • Salt & black pepper
  • For the Spicy Tomato Salsa

Start by cooking the freekeh.

Sauté the onion and garlic in olive oil until translucent, then add freekeh and sauté with the garlic and onion.

Season with salt and black pepper, then add the broth and cook until cooked through.

While the freekeh is cooking, clean the chicken and pat dry.

Mix all the chicken ingredients together and rub the chicken inside and out with the mixture reserving some for finishing.

Once the freekeh is cooked through, stuff the chicken cavity with the cooked freekeh and secure the legs and wings in place.

Place in a roasting tin and rub the remaining marinade mixture over the chicken, place the whole spices in the tin and roast covered for 1 hour in a hot oven.

When the hour is done, remove the cover and roast for 15 minutes extra to brown.

While the chicken is roasting making the spicy tomato salsa by mixing the ingredients together.

Serve hot with extra freekeh on the side and the tomato salsa.
