A staple in Levantine cooking, but what does Hummus have to do with it?!

Yogurt & cucumber salad is very famous in Levantine cuisine.

This is one salad that is always had as a relish next to food. Usually served next to rice-based concoctions, lamb-based dishes, Kubbeh dishes as well as being best loved next to meaty grills and BBQs and frequently used as a condiment in sandwiches…. Since we are talking about the levant, then another staple is hummus (chickpeas), why only stick to the dip? Ingredients

Serves: 8
  • 5 medium cucumbers, peeled & chopped
  • 1/2 kg plain fresh yogurt
  • 1 small clove garlic, crushed
  • 1/4 cup dried mint leaves
  • Salt and Black pepper to taste

 

In a large bowl mix all ingredients together until combined.

Chill.

Serve cold. That is it!!
