Are Muffins The World’s Most Popular Snacks?

Don’t blame the muffins for making it to the top charts, those muffin tops are to die for! I love dipping them into the frothy cream of my latte and I honestly have muffins for that part! This bread variety that falls between cupcakes and breads, offers the best of both worlds! They can be can be sweet or savoury and there is an infinite number of combinations that we can go for to create wonderful muffins every time.

This is just one option, a very good one, I must say. A perfect lunchbox item, afternoon tea snack or an amazing breakfast especially slathered with my lemon curd on this link

Ingredients

Serves: 12
  • 125g butter, softened
  • 150g caster sugar
  • 2 eggs
  • 300g self-raising flour
  • 1/2 cup milk
  • 1 tbsp lemon juice
  • 1 tbsp lemon rind
  • 2 tbsp poppy seeds

 

Preheat oven to 350F-180C.

Insert muffin cups into the holes of muffin pan.

Place all ingredients except poppy seeds in a mixing bowl and mix just until combined. Do not over-mix or you will end up with tough muffins.

Using an ice-cream scooper, scoop 1 heaped scoop for each hole.

Bake in the preheated oven for 20 minutes or until golden and toothpick comes out clean when inserted in the centre.
