A spin on the classic Shawerma

I was so excited when Al Alali got in touch me and informed me about their plan to launch a new flavoured Shawerma line. They told me they are bringing 3 amazing new flavours of shawerma to the market, one of which is Shawerma Tuna, the second Kapseh Tuna and also the Curry Tuna. As you can see they have chosen 3 very delicious flavours, all of which are very dear flavours to this part of the world. I was instantly excited and definitely on developing recipes for them as requested. I of course chose Shawerma flavour 🙂 Shawerma is an amazing flavour and I am all for  bringing new to the old and building on tradition. So while I shared with you the recipes of the traditional Meat & Chicken Shawerma in my book Plated Heirlooms, this tuna shawerma was going to complete that set, so we have shawerma of all the main meat types. What is not to love! As such and since we are bringing new to the old, of course I included the most traditional, shawerma roll (as we classically have this treat), yet added a twist here too in the making of the roll. So instead of the same old sandwich, I went for a spring roll, and as in Falasteen it is very common to make shawerma sandwiches in sesame Kaek (recipe in my book), I thought to simulate the whole sesame Kaek experience with my spring roll shawerma tuna! How cool is that, all the classics and all the new, meeting and being in each others company.

This right here is a flavorful spin on the classic shawerma by all means. One that highlights the new and delicious Alali Shawerma Tuna. I am not just saying this, I really enjoyed the flavour of the shawerma tuna, Al Alali did a great job there.

I have made this in mini rolls for you to serve when entertaining. They are delicious and really cute, and what is a roll without a really good dip? So of course I created a fantastic dip, also based on the classic Tahini sauce that will have you and your guests dipping and eating like rolls will disappear tomorrow! Finally, the baking of the roll is also a healthier option, which all in all the ingredients here are all healthy and light. So this is a great, light, healthy and absolutely delicious serving of an all new shawerma experience, check it out and try it, I know you will love it.

Ingredients

  • 2 cans Al Alali Shawerma Tuna
  • 1 cup toasted pine nuts
  • 1 tsp DS Organic Sumac
  • 12 spring roll sheets
  • 1 cup sesame seeds
  • 2 eggs, beaten
  • 1/4 cup DS Premium Organic Olive Oil

For Tahina & capsicum Dip

  • 2 tbsp tahini
  • juice of 1 lemon
  • 3 tbsp yogurt
  • 1 green capsicum, finely chopped
  • 2 spring onions, finely chopped
  • 1 bunch dill, chopped

For Garnish

  • Parsley, chopped

Preheat the oven to 370F – 200C. Line a baking tray with baking paper, brush with the olive oil and set aside.

Drain the tuna. In a small bowl, mix together the drained tuna, sumac and pine nuts. Set aside

In a separate bowl beat the 2 eggs well. Add 1 tbsp water to slightly thin the eggs.

Place the sesame seeds in a separate plate.

Place the tuna mixture at the centre of the spring roll sheet and roll as you would a spring roll.

Roll each roll in the egg wash and then roll it in the sesame seeds to coat completely. Then place on the lined baking tray.

Repeat until all the quantity had been rolled.

Bake in the preheated oven for 15 minutes or until golden.

 

In the meantime, prepare the Tahina and Capsicum Dip.

Mix the tahini and lemon juice together well. Thin slightly with water. Add the yoghurt and mix well. Add the chopped capsicum, onion and dills. Season with salt and black pepper and mix well.

Serve the rolls garnished with chopped parsley and a few pine nuts seeds (hot or at room temperature) with the dipping sauce on the side.
