"Deconstructed" is super fun and really elegant too!

 

The recipe here demonstrates the traditional way to make an oats & nuts crumble, however you can always go “deconstructed” if you are planning to plate the dessert, deconstructed allows a very elegant presentation and a very impressive way to serve this otherwise very traditional dessert. With that said, and as ever, of course it does not have to be peaches! It can be plums, strawberries, blueberries, pineapples…etc! You see I love sharing these recipes with you, because they really are awesome recipes, delicious and allow you limitless options and varieties, what is good cooking if not that!

 

Make this dessert to serve in the afternoon or after dinner, it is light enough to have after a meal, yet so decadent that it can become a meal on its own! Yes I love having this in the mornings too! Look there are different days and different moods, on days when you are feeling indulgent have it for breakfast but don’t make a habit of it. It’s all in the balance, but you already know that so here we go, try and see how good this is 🙂

Ingredients

  • 1 Kg peeled and sliced peaches or apricots (can use canned ones too)
  • 2 tbsp sugar
  • ½ cup oats
  • ½ cup brown sugar
  • ¼ cup flour
  • ¼ tsp ground nutmeg
  • ¼ cup butter, softened
  • ¼ cup chopped nuts
  • 3 tbsp desiccated coconuts
  • vanilla ice cream

Place the fruits in the baking dish and sprinkle with sugar.

Prepare the crumble topping. In a medium bowl, combine the oats, brown sugar, flour and nutmeg. Mix in the softened butter until the mixture resembles coarse crumbs. Stir in the chopped nuts. Sprinkle this topping on top of the fruits.

 

Bake in 190C oven for 30-35 minutes (until the topping is golden).

Serve warm with ice cream.
