When you make it yourself, you own it!
Blend the egg yolks, mustard, salt, crushed garlic and lemon juice in a food processor or blender until combined and smooth.
While the processor/ blender running, drizzle in the olive oil slowly in a thin stream.
Take your time and do this slowly so the aioli does not separate.
Mix in the chopped parsley if using and store in an airtight container in the fridge for up to two weeks.
